One of the most incredibly versatile of all the cruciferous veg, we welcome cauliflower to the culinary centre stage! The cauliflower or ‘cabbage flower’ (Latin translation) have tiny, tightly packed creamy white flower heads/buds (known as ‘curds’) and a stem that can be enjoyed raw, baked, roasted, steamed, or sautéed; and relatively recently used as a ‘rice’ or ‘grain’ substitute for pizza crusts, rice dishes, tortillas, and pasta dishes. 

While they can be handy to use in a variety of dishes, cauliflower are not the easiest to grow and happens to be the most frost sensitive of all the brassicas.  

Cauliflowers definitely enjoy the cooler season, however they need to be in areas with full sun (6-8 hours per day), minimal frosts and rich heavy soil to thrive.  So with these recent frosts but more sunshine than usual we were excited to see the caulis perform so well. 

Like other brassicas, cauliflowers are a good source of vitamin C with one serving of cauliflower (1 cup raw) containing 120% of an adult’s daily requirement for vitamin C.  Cauliflower is also a source of dietary fibre, folate and vitamin B6, and contains a dietary significant amount of potassium.

Resilience & Regeneration

Our veges are grown locally on our farm with no harmful sprays/chemicals inside our greenhouse, or outside in one of our classic 25m long garden beds. Happy herds of sheep, cows, and chickens are grazed in the pastures nearby, working as part of a regenerative system that nourishes the underground soil microbes, and giving back to Papatūānuku.
