Onions are a staple food item in a number of cuisines around the world.  The most common types are white, yellow and red and are often referred to as bulb onions or storage onions. They vary in flavour and taste ranging from mild and sweet to sharp and spicy, depending on the variety and season. 

Onions in general are rich in healthy soluble fibre that feed the beneficial bacteria in your gut. They also have a decent amount of vitamins such as Vitamin C, vitamin B6, potassium and folate.  

Purple and red onion varieties are also rich in powerful antioxidants such as anthocyanins that help reduce stress and inflammation in the body which are only found in red, purple and blue fruits and vegetables.  Red onions have a sharper and spicier flavour than brown/ yellow onions and not as meaty in texture so are often used raw in salsas, salads, and the first choice for braising, grilling and pickling - with the main drawcard being their purple / red coloured hue.  

If you find their flavour too astringent or aggressive for eating raw, try soaking them in a bowl of cold or ice water for 10 minutes before using in your dish. 

Store onions in a cool dry place.
